Confetti-Stuffed Burritos

Flour Tortillas stuffed with sweet potatoes, onoin, corn, black beans and red pepper.

Ingredients

3 large sweet potatoes peeled and cubed
1 1/2 cup(s) chicken stock
1 medium onion diced
3 garlic cloves minced
1 cup(s) corn kernels
1 14 1/2 oz. can(s) black beans
1 medium red bell pepper diced
1/4 cup(s) cilantro minced
1 lime juiced
1/2 10 3/4 oz. can(s) refried beans
8 flour tortillas
salsa

Directions

Combine sweet potato and broth in a medium saucepan, bring to a boil, cover and cook until potatoes are really soft. Add onion and garlic, cook 2 minutes. Add corn and next 4 ingredients, simmer uncovered about 6 minutes. Add refried beans

Divide mixture evenly between 8 tortillas, spooning mixture down center of each tortillas. Roll up. Roll in foil and place in gallon-sized plastic zip bags.

Leave a jar of yummy salsa in the fridge!
Serves 4

Customer / Re-Heating Directions

Reheat at 350° for 10-15 minutes. Take out of foil if you like a crisper burrito.
