Smothered Chicken

Chicken Breast simmered in a rich Gravy with Onions, Carrots, and Mushrooms

Ingredients

4 chicken breasts, boneless, skinless 4 ounces each
1/2 teaspoon(s) salt
1/4 teaspoon(s) pepper
1 tablespoon(s) vegetable oil
2 cup(s) carrots sliced diagonally 1/2 inch
1 cup(s) onion 1/4 inch slices
1 large garlic clove minced
2 8 oz. package(s) mushrooms presliced
1/4 cup(s) flour
1 14 1/2 oz. can(s) chicken broth, low-fat, reduced sodium
1 tablespoon(s) thyme, fresh

Directions

If desired, pound chicken breasts to even out thickness.

Coat a nonstick skillet with cooking spray and heat over medium high heat. Add chicken and season with s & p. Cook 4 minutes or until lightly browned, then remove to containers.

Heat the oil in the pan over medium high heat. Add carrot, onion, and garlic. Cook two minutes, then add mushrooms and cook until vegetables are tender. Stir in flour and cook two minutes, stirring constantly.

Add broth and thyme. Bring to a boil, and cook until slightly thick, stirring frequently.

Serving is one chicken breast and one cup vegetables.

To heat:

Thaw overnight in the refrigerator.

Heat, loosely covered, in the microwave at 70% power until hot throughout, about 3 or 4 minutes.
