Thai Cucumber Salad with Roasted Peanuts

Ingredients

1/4 cup(s) lime juice, fresh
1 1/2 tablespoon(s) fish sauce nam pla
1 1/2 tablespoon(s) sugar
1 1/2 tablespoon(s) jalapeno chile seeded and minced
2 garlic cloves minced
1 1/2 English cucumber halved, seeded, thinly sliced
3/4 cup(s) red onions thinly sliced
3 tablespoon(s) mint leaves, fresh chopped
3 tablespoon(s) peanuts, dry roasted lightly sauced, coarsely chopped
salt and pepper to taste

Directions

In a medium bowl, whisk together lime juice, fish sauce, sugar, jalapeno, and garlic. Place cucumber, onion, and mint in a large bowl. Add dressing and toss to coat. Season to taste with salt and pepper,
Sprinkle with peanuts and serve immediately.
