Orzo with Spinach and Asiago Cheese
Orzo flavored with garlic, spinach a touch of vinegar and sharp Asiago cheese

Ingredients
3/4 cup(s) orzo
2 teaspoon(s) olive oil
1 small onion chopped
1 small celery stalk chopped
1 garlic clove minced
1 cup(s) spinach leaf packed
1/4 cup(s) chicken stock
1/2 tablespoon(s) red wine vinegar
1/4 cup(s) Asiago cheese grated
black pepper to taste
Directions
Cook the orzo according to package directions
Meanwhile, heat a nonstick saucepan. Swirl in the oil, then add the onion, celery and garlic. Saute until softened, 3 to 4 minutes. Stir in the spinach, half the broth and the vinegar; cook stirring frequently, until the liquid evaporates, 2 to 3 minutes longer. Stir in the orzo, cheese, the remaining broth and the pepper.
Cool, package and freeze

Thaw overnight. Reheat in Microwave at 80% power for 3 minutes or until hot
